I don't know about anime or CGI or anything like that. If you really wanted to do the story as a whole, I think it would have to be done as a live-action television series along the lines of Band of Brothers. Something like ten or twelve hour to an hour-and-a-half long eps for each book, and then each episode focussing on a particular section/set of characters - for instance the first would probably be set in Winterfell and encompass the finding of the wolves, Robert arriving, Bran falling, and the departure to Kings Landing. Then you could do eps entirely centred around Dany's story line, Tyrion's storyline, Catelyn's story line and so on, and devote the time to establishing character and staying true to the plot, with each ep almost a self-contained movie. As far as actors go I'd go for unknowns or chameleon character actors, to make sure the story is at the front, not whos in it. Though Michael Wincott would be great as either Bron or the Hound, I reckon.

Of course, this would cost an absolute fortune - the sets, the costumes, the effects, the cast and crew - and probably wouldn't break even, so I doubt it would ever happen. But it's nice to dream.
