There have been more than three mentioned already, but I'll try to add a few more...

Lord of the Crossing was taught to Bran and Rickon by the Walders.

There were a number of mock military games played, and I do not mean the supervised training by Sers Rodrik and Aliser. Jon remembered his childhood sword fights with Robb. Arya and Mycah also crossed wooden sticks. Cley Cerwyn (I think) and his buddies pretended to be soldiers until the Greyjoys killed them. Alleras likes his friends to toss apples for him (or her) to shoot. And there was also an archery contest, won by Anguy the Archer, during the Hand's Tournament.

Sansa, with Middlefinger's help, built a snow castle.

Syrio taught Arya to catch cats.

Bran's climbing elvoved into a game of chase with the Winterfell guards.

Robert loved hunting boar.

Speaking of Robert, drinking games seem to be a favored pastime among some.... Merrett, Robert, Thoros, Greatjon, etc.

Brienne was tossed into a pit with a bear... so presumably, bear baiting was practiced some.

Catelyn and Lysa played a kissing game with Middlefinger.

The Magnar of Thenn had his climbers compete to reach the top of The Wall first.

The Meereenese have fighting pits for gladiators.

There are also a few references to gambling. Tyrion's and Middlefinger's famous (infamous) bet regarding a certain Valyrian Steel blade is the first that comes to mind.

Uhhh - I'm actually not sure who to give the win to... All the answers complete each other. And then there's Boaz, who surpasses us all.

Uhhh, when I said I didn't know who the winner was, I was kinda hoping you guys would figure it out by yourselves, lol.

But since there has been an ominous silence in this thread and I don't want to stall the game, I'll nominate Pilpel, because he gave the first correct answer (sorry Tywin, but The Game of Thrones was really not what I was looking for - I maybe should have been more precise in my question), and then added a second one. So, he gave 2 of 3 correct answers and beat firstfist by 2 whole minutes.

Next round, then, by my completely arbitrary judgement, goes to Pilpel.

But, on second thought, maybe what you're looking for is the whole plan with the Crannogmen, and using them as guides through the swamps to attack Moat Caillin from the north?
