Yeah, that's the thing people have to keep in mind with most action scenes in a film. REAL swordfights, for example, are usually over with pretty damn quickly in a couple of moves. Action in film is usually not there to show you 100% what would actually happen, it's usually there to entertain. Even film that strive for gritty realism (take the kali knife fights in The Hunted) often keep the fight going for a little longer than is actually realistic

It's like watching a dance number in a musical. You know at the back of your mind that this kind of thing doesn't happen in real life, but it's still kinda cool.

Agreed. THAT was seriously funny. As is they way the winner kicks the corpse of the loser at the end. It's those little touches that make the fight for me-flicking the sparks off the floor to create a distraction, the fight against the wall where they pin each other's weapons, the hand trapping and joint locks. I love things like that.
