An average fighter can kill someone in an instant if you measure from the fatal blow to the death. "Making short work" of someone means defeating them in a quick fight (that did not happen). The Mountain struggled through a long fight and made the fatal blow after The Viper thought he was out and got careless. It could have gone either way (though it worked out for the best in the end).
